This is an interesting article about which vegetables develop and contain the most vitamins and minerals when they’re cooked. You may be surprised at some of these! In any case, as the author says, everybody is different and some tummies can better tolerate cooked versions of vegetables. Personally, I do eat raw mushrooms and enjoy them, but most other veggies I eat are steamed in filtered water. Enjoy some vegetables however you like them!
