does it hurt to cook them until they are soft? Do they still have the nutrition?

Cooking carrots is beneficial – it increases the availability of beta-carotene (which helps make vitamin A) and total nutritional capacity by breaking down tough cellular walls, making them easier to absorb. While beta-carotene increases, other nutrients like vitamin c and certain water-soluble vitamins may decrease due to heat exposure.
